Passionate about pastaPasta has been eaten in Italy for over two thousand years - long before Marco Polo tried what he called 'lasagne' in China - and Italians have turned it into a culinary art - fettuccine, linguine, macaroni, tortellini, tagliatelle, lasagne, cannelloni, ravioli, and of course spaghetti.
The first pizzaThe first pizzas were flat rounds of dough flavoured with olive oil and herbs and baked on stones - the origin of focaccia. The pizza we know today arose after Christopher Columbus with the tomato from the Americas - the pomodoro or apple of gold as it's called in Italy. Pizza was already popular in the seventeenth century in Naples, and the Neapolitan pizza - Margherita - made in the colours of the Italian flag with the red of tomato, the white of mozzarella, and the green of basil - was created for Queen Margherita by the famous Neapolitan baker Raffaele Esposito in 1889.
The art of gelatiItalians have made ice cream, like pasta and pizza, into a culinary art. The famous Sicilian ice-cream maker Procopio made sorbets of fruit juice and shaved ice (a luxury before fridges) flavoured with jasmine or rose. Sorbetti were served between courses at great banquets to aid digestion, and later eggs, milk and cream were added to create ice cream or gelato.
